The harvest calendar
Harvested in windows, allocated with intent.
Each grade is tied to a harvest window, leaf standard, and cup direction. Buyers sample first, then reserve against confirmed availability.
May to August defines the cup.
Spring windows bring finer leaf and brighter structure. Later windows bring deeper body, strength, and volume.
